Cut your chicken breasts through the middle to butterfly them so they become two thinner, larger pieces.

Mix the miso and soy sauce, add to the chicken and marinate overnight.

Heat a griddle pan over medium high heat and brush with a little olive oil. Once very hot, add the chicken.

Let cook for around 7 minutes and then flip to cook until cooked through with a nice char (about another 6 minutes).
5.
Serve with salad or vegetables.
