I love how simple but delicious this salad is. It would work really well as a holiday side or starter.
Ingredients
- 2 cups cooked beetroot, chopped
- 1 tbsp olive oil
- 8 cups rocket salad
- 1 pear, diced with a sprinkle of cinnamon
- A handful of walnuts, crumbled
- 1/4 cup goats cheese, crumbled (omit for low fat diet)
- 2 tbsp balsamic glaze
- Salt and pepper to taste

Toss the beetroot in the oil and then roast for about 20mins.

Add all ingredients to a bowl and serve
