Pumpkin Oat Pancakes

A delicious healthy pancake recipe that is full of fibre!
Ingredients
  • 170g pumpkin puree (either roast and puree fresh pumpkin or you can buy canned pumpkin puree in the autumn at most supermarkets) 
  • 140g oats
  • 175ml milk of your choice 
  • 2 eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon 
  • 1/2 tsp all spice
  • 1/2 tsp ginger 
  • 1 tsp vanilla extract

Instructions
1.
Add all ingredients to a blender and blend to combine.
2.
Heat a nonstick pan on medium heat.
3.
Add about 2 spoonfuls of pancake mixture and heat for about 2-3 minutes.
4.
Flip and continue to cook for another 2-3 minutes (if they are getting too dark, turn the heat down)

Enjoy hot!

Tip
The pancakes are best cooked straight after blending.
