Protein Pancakes

A little twist on American style pancakes for when you need to feel like you’re having some comfort food. However, this is a super low carb, super high protein version!
Ingredients
  • 3 scoops of 25g protein powder (use a high quality one with few ingredients and no refined sugar)
  • 2 eggs
  • 1 tbsp cinnamon
  • 1 tbsp lemon juice (optional)
  • A little nut milk (or regular if you prefer)
  • A little butter or coconut oil to grease the pan

Instructions
1.
Mix all your ingredients together in a bowl, only adding enough milk to get the consistency you would like.

Grease your pan and heat over medium.
3.
Once hot, add spoonfuls of batter to make small rounds.
4.
Let cook for a couple minutes until the bottom can be easily lifted up with a spatula and flip.

Cool for another couple minutes. Serve with coconut yogurt and berries!
