Kale is so nutricious and delicious when prepared correctly. This is a super simple salad to enjoy as a side of as a main dish with added protein.
Ingredients
- 90g kale
- 1.5 tbsp olive oil
- Salt
- 1 tbsp lemon juice
- 1 tsp grated Parmesan (optional)
Instructions

Add your olive oil, salt, and lemon juice to the kale.

Massage the kale with your hands for about 3 minutes, when it should be tender and softer.
3.
Add your grated parmesan on top if using.
Tip
This would be delicious as a bigger dish with an egg, salmon, chicken or tofu.
