Cut the tops of your peppers off and remove seeds.

Use a sharp knife to cut jack-o-lantern faces on your peppers.

Rub with olive oil and salt and set aside.

In a large pan, heat the olive oil on medium high heat.

Add onion and cook until translucent, a few minutes.

Add the turkey and season. Stir, breaking it up with a wooden spoon.

Once browned, add the tomato and stock cube and stir to combine.

Add the spinach to wilt and combine.

Fill the peppers with the stuffing and then sprinkle with cheese.

Place cap back on top and cook for about 30-35 mins.
