A quick and easy lunch recipe that is a great way to use up leftover chicken!
Ingredients
- Large lettuce leaves
- 1/2 cup shredded cooked chicken
- 1/4 cup Greek yogurt
- 3 tbsp pesto
- Juice of 1/2 lemon
- Salt and pepper to taste
Instructions

Combine all the ingredients other than the lettuce in a bowl and mix to combine.

Serve in lettuce leaves.
Tip
Making extra chicken at the beginning of the week gives you lots of cooked protein to grab in a rush.
