I absolutely love variations on the classic chopped salad and it's such a fun way to get creative and allow the family to get involved.
Ingredients
2 cooked chicken breasts, chopped
1/3 cup chopped cooked bacon pieces
4 cups chopped romaine lettuce
1/2 cup chopped cherry tomatoes
1 small avocado, chopped
3 tbsp olive oil
3 tbsp apple cider vinegar (with the mother if available)
1 tsp Dijon mustard
Sprinkle of garlic powder
Salt and pepper to taste
Other options for yourself or for your family or guests could include chopped red onion, cheese, peppers, chickpeas, egg, cucumber etc. I had mine like the example, but my husband didn’t want it like that, so I removed the tomatoes and avocado for his and changed it for onion and cheese)

Instructions

Chop your chosen ingredients and then arrange around a bowl.
2.
Mix your dressing of olive oil, apple cider vinegar, mustard, garlic and season with salt and pepper.
3.
Drizzle dressing over your salad and toss to combine.
