I adore this new trend to bake oats! There are so many flavour combinations you could try and you get a wonderful serving of fibre. We really all need to work on getting enough fibre each day, as the average person consumes only half the recommended daily amount.
Ingredients
- 90g oats
- 2 eggs
- 200g unsweetened coconut yogurt (or dairy if you prefer)
- 100g berries (or more if you want it sweeter)
- 1 tbsp vanilla extract
- 1 tbsp cinnamon
- 1 tbsp chia seeds

In a blender, combine all ingredients.

Pour them into two small baking dishes and bake for about 25 minutes.

Serve with extra yogurt, berries, nut butter or whatever you prefer.
